Just a few things...

I wrote this brilliant post yesterday...

I should have a profoundly beautiful post prepared since it's my seventh anniversary and all, but instead...here is a list of random thoughts.

1. We are back from Mitchell and Dustin's amazingly fun wedding weekend! Wedding recap coming soon...It was a perfect weekend. Thanks to all who prayed for our family!

2. I made some amazing guacamole today. The plan is to eat it with leftover rehearsal dinner chicken mom sent home with us, but I have a feeling I'll be dipping into it prior to dinner. I think the secret ingredient to amazing guacamole is garlic salt. I made mine with a large avocado (which I picked out by finding one that felt like the tip of my nose--thanks, Em!), pico, garlic salt, and lime juice. FYI - If an avocado feels like your forehead to the touch, it's too hard. If it feels like the skin under your jaw bone, it's too soft. If it feels like the tip of your nose...it's just right. I promise it works every time. My cousin-in-law Casey taught me that when I was visiting he and Em in Tampa.

3. Speaking of guacamole, I still can't stop thinking about the fiesta we had after the wedding Saturday night at my mom's house. The wedding was at 2 pm, so by 9 p.m....It was time for the fiesta of all fiestas! I made it home with a container of Las Palmas salsa that I ate half of tonight with some crackers. Mitchell would have been so proud at the amount of salsa I secured from the restaurant. They have tried to shiest us before, but no...not this time.

4. My BFF from high school (and beyond) asked me to be her co-matron of honor this weekend; I'm so honored/excited/nervous. ;) BB is getting married May 7th of next year! Yay! Last night for our anniversary, Kyle gave me roses, a card, and a bridal magazine. I thought maybe he was whisking me away somewhere to renew our vows, but instead he was helping me build resources with which to research my role as co-MOH. If that doesn't say "Happy Anniversary", I don't know what does! And I'm totally serious. I love his thoughtfulness. He said it took him 10 minutes to pick out the right magazine. Have no fear, little Francois (will explain this nickname of BB's at a later time), Kyle is excited about the wedding!

5. My little flowers did great while I was gone. I was so happy to see them when we got home.

6. I had more amazing food this past weekend than I have had in 2010 so far. I'm not lying.

7. I am not ever leaving town with a messy house again. I usually don't, but this time I did. It was miserable to walk into a house that needed straightening.

8. I bought some vanilla caramel black tea today, and I am hooked. I've been trying to make the switch from coffee to tea (not that I'll never have coffee, just less of it and not everyday), but the caffeine in my Lipton tea that I make for Kyle doesn't cut it. This Bigelow tea does the trick. Yum.

9. Well, that's it. It told you this post was brilliant.

PS I am the same way about leaving a messy house! (and it seems to happen all the time, but I hate it!)

Garlic Salt is definitely the secret ingredient. I learned that from teaching adult ESL classes. They also weren't found of putting lemon or lime juice in. I appreciate the tip for picking out avocados. It is easy to remember and makes sense!

It can be such a pain to pack and clean before a trip but it is totally worth it! I'm a lucky girl because Mike has embraced this concept and actually does the majority of the cleaning.
