A Yummy (and healthy) Breakfast :)

Quite possibly one of my favorite things about staying home with Jackson is enjoying our breakfast together. Right now, I'm sitting with him playing DJ while he eats. It's not my usual custom to have my lap top out while we're doing anything like this together, but I wanted to listen to "When Christmas Comes to Town" from The Polar Express...love that song. We started out listening to Christmas songs, but I just told him that if he eats another whole piece of his waffle we will listen to the Tiger Band. :)

OK...on to the point of while I'm writing this...

I wanted to share a yummy breakfast that I frequently make for Jackson. It's a great alternative to waffles with syrup, and it takes approximately 3 minutes to prepare.

Toast your favorite whole grain waffle (or make your own). Spread some organic low fat french vanilla yogurt (I buy the tub of Stonyfield) on the waffle. Add defrosted (cut up) fresh berries, all natural granola, and a little local honey. Voila! It's packed with nutrients and is sure to be a crowd pleaser. It sounds expensive, but I keep these ingredients on hand at all times, and I get a TON of use out of one tub of yogurt, a bag of granola, a bag of frozen berries, and a container of honey.

Anyway, off I go...my little man is about to finish his breakfast, and we have things to do! The Polar Express Train (hand-me-down from cousin Jacob) is in need of a conductor.
